The Christmas carols are abuzz in our household and would you believe it that Rudolph the Reindeer randomly came on as I’m typing this!
So my mind has been in overdrive with Christmas baking ideas! These past two days have been fun filled with festive macarons! When I make a batch of macarons, assuming they all turn out, it should make for 60 macarons. So I divided the mixture into a third and added coffee to get these latte coloured shells that would soon become my Rudolph macarons.
As if the house doesn’t already smell like sweet gingerbread goodness, I decided to sandwich these macarons with my usual vanilla buttercream frosting to which I added all these festive spices like ginger, cinnamon and cardamon, to become a gingerbread-ish/ginger spiced buttercream frosting. Add the salted pretzel antlers and you have a wonderful mixture of sweet, salty and spiced macarons!
Like my snowman macarons, these were originally faceless. However, with a trip to the shops, I purchased an edible marker pen so that I could paint eyes on these reindeers which gives these macarons so much more character!
