One of my go-to recipes when I want something delicious and healthy.
The best part about this dish is that it is quick and easy to make with little fuss and prep work.
The kids love this one for leftovers and it is a dish that is good to have in your recipe tin if you are stuck for dinner ideas.
Teriyaki Chicken and Healthy Greens
Ingredients
- 3 cups healthy greens I like to include veggies like Broccoli, Wombok, Chinese Spinach or Bok Choi
- 3 pieces chicken either breast or thighs (for juicy pieces)
- 1 Tbsp Olive Oil
Sauce
- 3 Tbsp brown sugar
- 1/4 cup soy sauce
- 1 tsp grated ginger
- 1 Tbsp sesame oil
- 2 tsp corn starch
- 2 cloves garlic minced
- 1/2 tsp sesame seeds preferably toasted
Instructions
- Combine all of teriyaki sauce ingredients in a small bowl.
- In a cast-iron skillet brown chicken over a medium heat in oil until cooked on all sides and caramelized. Ensure your pan is hot enough otherwise your chicken will broil rather than caramelize.
- Combine teriyaki sauce to pan and stir gently for 1 to 2 minutes until sauce thickens.
- Stir in healthy greens with chicken and sauce. Make sure not to overcook your greens. The dish is better with some texture in the greens.
- Serve over rice with sprinkled sesame seeds and enjoy!
