Teriyaki Chicken and Healthy Greens

Ingredients

  • 3 cups healthy greens I like to include veggies like Broccoli, Wombok, Chinese Spinach or Bok Choi
  • 3 pieces chicken either breast or thighs (for juicy pieces)
  • 1 Tbsp Olive Oil

Sauce

  • 3 Tbsp brown sugar
  • 1/4 cup soy sauce
  • 1 tsp grated ginger
  • 1 Tbsp sesame oil
  • 2 tsp corn starch
  • 2 cloves garlic minced
  • 1/2 tsp sesame seeds preferably toasted

Instructions

  • Combine all of teriyaki sauce ingredients in a small bowl. 
  • In a cast-iron skillet brown chicken over a medium heat in oil until cooked on all sides and caramelized. Ensure your pan is hot enough otherwise your chicken will broil rather than caramelize.
  • Combine teriyaki sauce to pan and stir gently for 1 to 2 minutes until sauce thickens.
  • Stir in healthy greens with chicken and sauce. Make sure not to overcook your greens. The dish is better with some texture in the greens.
  • Serve over rice with sprinkled sesame seeds and enjoy!
