Teriyaki Chicken and Healthy Greens

- 3 cups healthy greens I like to include veggies like Broccoli, Wombok, Chinese Spinach or Bok Choi
- 3 pieces chicken either breast or thighs (for juicy pieces)
- 1 Tbsp Olive Oil
Sauce
- 3 Tbsp brown sugar
- 1/4 cup soy sauce
- 1 tsp grated ginger
- 1 Tbsp sesame oil
- 2 tsp corn starch
- 2 cloves garlic minced
- 1/2 tsp sesame seeds preferably toasted
Combine all of teriyaki sauce ingredients in a small bowl.
In a cast-iron skillet brown chicken over a medium heat in oil until cooked on all sides and caramelized. Ensure your pan is hot enough otherwise your chicken will broil rather than caramelize.
Combine teriyaki sauce to pan and stir gently for 1 to 2 minutes until sauce thickens.
Stir in healthy greens with chicken and sauce. Make sure not to overcook your greens. The dish is better with some texture in the greens.
Serve over rice with sprinkled sesame seeds and enjoy!
